Diffuse Double Layer of Casein Micelles and Stability in Milk 乳中酪蛋白胶粒的扩散双电层及稳定性
With ε_ ( sv), the half distance between two layers of montmorillonite after hydration and the thickness of diffuse double layer based on Gouy-Chapman theory were calculated and compared. 根据sεv计算出水化后蒙脱石矿物层距离的一半和基于Gouy-Chapman理论的扩散双电层的厚度,并对二者进行了比较。
